My name is Lee and I believe in living to eat. I love all different types of cuisine and will seriously try anything once. I unfortunately have a modicum of kitchen. Since October of 2012 I have made a pact with myself to get back into cooking and making healthy meals for myself instead of shelling out my hard-earned cash on less-than-stellar lunch options on campus. I got into traditional Japanese bento making, found it WAY too labor intensive (while simultaneously developing an enormous amount of respect for the Japanese women who make those bentos for their children every day), and embarked on my own Americanization of the bento. I try to focus on massive vegetable consumption because while I love them, I tend to neglect them. I’m also a low-carbohydrate oriented person since I lost 15 pounds in about a month just diminishing my carbohydrate intake. While being a living-to-eat type of person, I do have to take care of myself so I don’t let food pile up on me. I try to pack enough protein into my bentos so that when I’m finished working out, I can annihilate my lunch and feel satiated from the protein.
