I bought mini croissants to bake and freeze because I felt like it was a healthier indulgence! I made chicken salad with Greek yogurt,red onion, Fuji apple, herbes de Provence, salt, and pepper. I forgot to add a bit of stevia to make it sweeter because I like sweeter chicken salad, but the savory route was tasty as well. My wee sandwich is on a bed of baby lettuce with sliced cucumber and balsamic glaze. To the left is a healthy portion of avocado, edamame, mashed sweet potatoes, and maple almond butter.
